Spanish dry sherry is wine that is aged in partially filled casks to oxidize and intensify its flavor, and finished with a swish of brandy for extra oomph. Sherries range from flinty to nutty to sweet. Sweet cream sherries are for old ladies to sip; for cooking, stick with dry sherry. I always have a bottle of dry oloroso sherry in the refrigerator. The complex, nutty taste adds depth to soups with earthy flavor profiles like Many Mushroom and Quinoa Soup, and it enhances creamy soups like Creamy Wild Rice and Turkey Soup. Look for sherry in the wine department of grocery stores. Sherry keeps in the refrigerator for up to 3 months.
