The sweet potato is a nutritional all-star. It is jam-packed with vitamins, in particular A, C and E, as well as beta carotene, protein, fibre and carbohydrates. But, it’s the versatility of the sweet potato that truly gives it superstar status. It’s delicious baked or as chips and it makes fantastic, fudgy brownies. A smart idea is to bake or steam 3–4 sweet potatoes at the start of the week and keep them in your fridge ready to make into falafels for the road, or to add to smoothies or a quick nutritious salad when you get home.
