Brought to the islands by early European settlers, lime trees flourished throughout the islands and, together with hot pepper, lime has become one of the most important ingredients of Caribbean cooking. Lime juice is used in most dishes, to clean and season fish, poultry and meat and as a flavouring for a host of vegetable dishes as well as desserts and drinks.
