Also known as chayote (and cho-cho in Jamaica), this pear-shaped squash has a delicate flavour and ranges in colour, though light green is the most common commercially available. The skin can be slightly prickly or smooth. The pip inside is edible but most people remove it and the skin before cooking. It can be eaten raw as well and is delicious in salads. The taste is similar to courgette, marrow and young squash.
