The edible inner part of the stem of the cabbage palm tree is called the heart. These mild-flavoured shoots are eaten both raw and cooked and are available canned from most delicatessens and West Indian shops as ‘hearts of palm’, ‘chou palmis’, or ‘chou palmiste’. Palm heart has a similar texture to globe artichoke.
