This edible tuber is grown throughout the tropics. The skin varies in colour from brown to deep pink to white and the flesh also varies from orange to greenish. It is extremely high in vitamins and can be found in many supermarkets today as well as specialist shops. It can be cooked in all the same ways as Irish or English potatoes. In America they are called sweet yams.
