Throughout the islands, both fresh and dried beans or ‘peas’ are abundantly used. It would not be too much of an exaggeration to say that rice and beans are eaten at least once a day by most West Indians. They are a cheap and very healthy source of protein. Popular types include: red (kidney), black (kidney), pigeon peas, gungo peas (rather similar to pigeon peas; black-eyed beans can be used instead of either), broad beans and butter beans.
