Allspice/pimento

Allspice or pimento is the dried berry of the pimento tree. The flavour is similar to a mixture of cloves, cinnamon and nutmeg. It is one of the core ingredients in jerk seasoning. It is used much in the same way as cloves, either whole (then removed before serving) or ground.
