This pungent spice, which is used in numerous dishes throughout the islands, both sweet and savoury, is cultivated in the Caribbean islands by the French and Dutch. The dry unopened buds resemble tacks or nails and the word ‘clove’ is derived from the Latin word for nail, clavus. It is available both whole and ground.
