This pungent-tasting plant is part of the parsley family. It is often confused with flat-leaved parsley in appearance but the taste is quite different. The seeds are one of the ingredients in garam masala. Coriander is used extensively in the cooking of the Spanish islands. Use culantro as a substitute.
