This strong, peppery flavoured spice grows abundantly throughout the Caribbean and is used for flavouring both savoury and sweet dishes. Nowadays Jamaican ginger is believed to be one of the best in the world. It is also used to make tea as a cure for stomach ailments and also as a wine and ‘ginger beer’. It is available both fresh (in the form of a knobbly root) and dry, as a ground powder, which is not as pungent.
