Grenada is one of the world’s main producers of nutmeg and mace. Nutmeg and mace come from the same nut of the nutmeg tree. When the fruit ripens the outer pericarp splits open to reveal the scarlet mace covering the brown nutmeg. When fresh, the mace is still pliable to strip off and dry. Mace is either sold dried or in powder form. The nutmeg must be shelled before it can be grated or ground into powder or crushed for the oil. Nutmeg and mace are used to flavour both sweet and savoury dishes as well as in many drinks.
