Throughout the Caribbean there are many different species of crab but it is the land-crabs’ that are considered the best. They are found where there is fresh water, in ponds and streams, and thrive in the many mangrove swamps. These are small crabs about 5–7.5 cm (2–3 inches) in diameter on average. The meat is often seasoned with spices and mixed with breadcrumbs and then stuffed back into the shells - crab backs’. They are also used to make callaloo soup, curries and stews.
