Amuse-bouche literally means ‘amuseing the mouth’. This is a terrific way of eating and it fits to a clove head the introduction of a new recipe or cuisine. Here, restaurants prepare lots of little platefuls of food so anyone can try a little bit of this or that without a serious commitment. The Chinese do it with dim sum so why not do it with Caribbean!
