For this section you’ll need to forget everything I said about traditional jerk in the section above, grab your jar of jerk seasoning and see what else you can do. I have now heard of everything from jerk sushi to jerk alligator. What next? Well that is up to all of us, because it seems that with a developing cuisine the things that people like and cook over and over are the recipes that get on the menu and stick.
If you like the flavour of jerk you will do as many Jamaicans do and start using it as an all-purpose seasoning. The highnotes are the allspice, the peppers, spring onion and cinnamon. These are all strong flavours so you need to use jerk sparingly and think about what other resilient foods you will need to balance it. Grab your grill pan, oven or casserole dish if necessary. I only draw a line here at the microwave.
