It won’t really make a difference if you use a large onion, potato or tomato instead of a medium one, or if you use two tablespoons of parsley instead of one. Quantities of some ingredients are more a matter of taste or convenience, so use your common sense.
However, I’d recommend that you stick to exact measurements with baked recipes and desserts as those results are based on precision.
