Aji Cachucha, Aji Dulce, or Rocotillo

Small red, yellow, or green pattypan squash–shaped chiles. They look a lot like habaneros, but are mild to moderately hot in flavor. If they are not available, substitute sweet bell peppers or a medium-hot chile such as Anaheim.
