A large, round squash with firm, orange flesh and a sweet flavor, it is added to soups and stews, boiled and served as a vegetable with garlic sauce, or made into a custard. It is sold in precut chunks at Hispanic markets. Sweet pie pumpkins and butternut and Hubbard squash are good substitutes.
