A dry-cured Spanish sausage highly seasoned with garlic and paprika. Unlike fresh Mexican-style chorizo, the Spanish-Cuban variety is ready to eat. In Cuba, chorizo is frequently used in stews and paellas. It comes in several different sizes from two to eight inches in length. Though usually sold wrapped in plastic wrap, they are also sometimes packed in lard.
