A sauce made with bitter orange juice, garlic, salt, and sometimes olive oil. It is used as a sauce for cooked yuca and other vegetables. It is also used as a marinade for fish, meat, and poultry. Bottled mojo sauce is sold at Latin American grocery stores, but freshly made mojo is best.
