Tasajo must be soaked overnight in several changes of water to remove the salt before it is cooked. This method of preserving meat dates back to a time before refrigeration. Tasajo has a distinctive flavor and is still sold in Cuban grocery stores. If it is not available, however, substitute fresh beef brisket.
