White chocolate is actually ivory, the original color of cocoa butter. It contains no cocoa paste, so the cocoa butter flavors and colors the chocolate with its pigments and forceful tannins. In the case of white chocolate, the cocoa percentage is entirely cocoa butter! The remainder comprises sugar and powdered milk.
