Caciocavallo

A pasta filata (plastic curd) cow’s milk cheese with the characteristic shape of a large ball with a small appendage. The odd name (literally “horse cheese”) is said to derive from the practice of tying two cheeses together and slinging them “astride” a horizontal bar.
