The term pastasciutta or pasta asciutta, which means “dry pasta,” is used for pasta served with a sauce or condiment. It is thus distinguished from pasta served in a broth or soup. This distinction should not be confused with that between fresh pasta (pasta fresca) and dry or factory-made pasta (pasta secca).
