How Made Bite-sized dumpling formerly made of flour and water, and probably of irregular shape because it was torn. Stale bread was subsequently added to the original dough, and, much later, potatoes. The gnocco was then enriched with other ingredients, such as ricotta, different flours, vegetables, or often a mixture.
