How Made The flour is sifted and kneaded with eggs for a long time. Depending on the type of pasta desired, water may be added. When the dough is firm and smooth, it is covered and left to rest. It is then rolled out into a sheet, not too thin, which is laid on a special stringed instrument called a chitarra (guitar). Under the uniform pressure of a rolling pin, the strings cut the pasta to make the famous maccheroni, which are a sort of square spaghetti about 12 inches (30 cm) long. They are boiled in salted water.
