How Made The flour is sifted and kneaded with eggs, oil, wine, salt, and sometimes tiny leaves of marjoram or finely minced borage. The dough is worked long and vigorously until firm and smooth, then covered and left to rest. It is rolled out with a rolling pin into a thin sheet, which is cut into flat noodles about ⅝ inch (1.5 cm) wide. They are boiled in plenty of salted water.
