Ingredients Durum-wheat flour or type 00 wheat flour, salt, and a few eggs.
How Made The flour is sifted with a pinch of salt onto a wooden board and kneaded long and vigorously with only a few eggs, so the dough will be quite hard. After the dough has rested, small pieces are pinched off and worked with oiled hands into narrow strips 1¼ or 1½ inches (3 or 4 cm) long. These are curled to resemble a corkscrew. The ricciolini are cooked in broth.
