This fish which is a variety of the Char, is similar in shape to a large smelt. The delicacy of the flesh surpasses that of all fish, even that of the mountain river trout. They are found in Lake Zug in Switzerland where they inhabit the deepest waters and are fished only during November and December when they rise to the surface. They may be prepared in any of the ways applicable to river trout.
