Sheep’s Trotters

Sheep’s trotters should first be singed then rubbed with a piece of clean cloth. The small tuft of hair in the cleft of the hoof is next removed and then the covering of the hoof itself. Now split the trotters open lengthways and bone them out.

They are generally cooked in a Blanc.
