All of the recipes given for cardoons are suitable for celery and the same methods should be followed. With reference to these recipes, celery can also be prepared au Parmesan, Mornay and à la Milanaise.
The sauces which are suitable for serving with celery are: Demi-glace, Moelle, Crème, Fines Herbes, Italienne, Hollandaise, au Jus etc.
