Where possible, spinach should always be cooked at the last moment.
Cook the picked and washed spinach in plenty of boiling salted water, refresh, drain and squeeze out all the water. According to requirements it may be chopped or passed through a sieve. For leaf spinach there is no need to refresh or squeeze; it is only necessary to lay it out on a sieve to drain well.
