4143 To shell Chestnuts

To prepare chestnuts make a shallow incision in the shell on the round side and place on a tray with a little water. Place in a hot oven for 7–8 minutes then remove both the outer shells and inside skins without breaking the chestnuts.
Another way to skin them is to cut them as before then place a few at a time into hot deep fat for a few moments then shell them whilst still hot.
