Guar gum is derived from the guar bean, Cyamopsis tetragonoloba. The gum varies in color based on purity (in descending order) from pale slate to muddy gray or pale pink-beige. “Gum” is something of a misnomer, because what we use, and find available in our stores, is a powder.
