I picked up this trick years ago from Jacques Pepin, and I love it. Cut out parchment paper rounds to fit your pan, then generously grease the pan with butter. Press the parchment into the bottom of the pan, then, using the tip of a knife, flip the parchment so both sides of the paper are evenly coated with butter. Isn’t he amazing?
