Having bowls in a variety of sizes is helpful for measuring out in advance all of the ingredients you need for a recipe. (Or, you can use small storage containers for holding measured ingredients.) At the very least, you will need at least one small metal or sturdy, heat-resistant plastic bowl for holding cracked eggs and for whisking together liquid ingredients, and one medium-to-large metal bowl for folding cake batters, whipping cream, and to use as a bain-marie bowl.
