Make things ahead and use your freezer

Your freezer is one of your best friends when it comes to baking. Almost every dough can be made ahead and stored in the freezer, and many pastries, especially breakfast pastries, suffer little loss of flavor or texture if you store them, unbaked and well wrapped, in the freezer. The Flour freezer is stocked to the brim with pie dough, tart dough, and unbaked scones, brioche, and certain cakes. This little trick allows us to offer dozens and dozens of freshly baked pastries to our customers without having a coterie of bakers in at midnight every night to get ready for the next day. You probably don’t want to be up at the crack of dawn every time you want to serve a freshly baked breakfast treat, and you can’t be tied to your kitchen all day the next time you want to make a cake. So, use the freezer to your advantage. If you always have a bit of cookie dough or tart dough on hand, you’re just minutes away from a delicious dessert.
