Rice is very easy to cook and does not require any special skills. If you follow a few basic guidelines, you will not have any trouble making perfectly cooked rice. Most of the recipes in this chapter use long-grain white rice or basmati rice, both of which are readily available in most supermarkets or Indian grocery stores. I usually cook rice after preparing the accompanying dishes that go with it, as they can be easily reheated, so then the rice is steaming hot when served.
