Sourdough breads have been consumed since antiquity. The word “sourdough” goes back to Middle English, and recipes for such breads appear in English cookbooks beginning in the seventeenth century. Sourdough bread is made with wild yeast and bacteria that give a slight sour taste to the bread. As yeasts and bacteria vary with location, sourdough breads differ as well. San Francisco has become famous for its sourdough bread.
