In colonial times, vinegar and oil was the most prevalent salad dressing. As salads became more important as the nineteenth century ended, salad dressings increased in diversity. By 1900 dozens of different dressings were employed on various salads. Beginning in the late nineteenth century, salad dressings were commercialized and seven major salad dressings emerged: Russian, Italian, blue cheese, Thousand Island, French, Caesar, and ranch.
