Condiments: Continued Use of Condiments

Appears in
Oxford Encyclopedia of Food and Drink in America

By Andrew F. Smith

Published 2004

  • About
In the twentieth and early twenty-first century, the use of condiments in America expanded mainly due to their decrease in cost. The downside of the widespread dissemination of certain condiments was standardization. This loss of diversity was offset by the infusion of new condiments generally introduced by immigrants. Gradually, ethnic condiments became part of the culinary mainstream. American condiments have greatly influenced the world as many have been transported into other cuisines through American fast food establishments.
