Crepes and creperies have their roots in the Brittany region of France but have spread in popularity across France and, indeed, across the United States. Crepes are thin, flat pancakes, traditionally made from buckwheat flour, that can be filled with a variety of foods, from meats and cheeses to vegetables to fruits, compotes, and sauces. In the United States, a creperie can be either a small, casual cafe or a food trailer (as opposed to the tiny street stalls found in Paris). American creperies have put various playful spins on the classic bite while staying true to the spirit of the humble, inexpensive French crepe.
