Game Birds

Appears in
Oxford Encyclopedia of Food and Drink in America

By Andrew F. Smith

Published 2004

  • About
“Game birds,” here, refers to upland species—as opposed to waterfowl, such as ducks and geese. Most of the nonmigratory species are considered gallinaceous, meaning they lead a chicken-like existence, pecking around on the ground for their food.
