Migratory Species: Songbirds

Appears in
Oxford Encyclopedia of Food and Drink in America

By Andrew F. Smith

  • About
Songbirds (such as black birds, larks, and plovers) had been hunted, in Europe and elsewhere, for ages, and were featured in the earliest American cookbooks, such as those of Amelia Simmons and Lydia Child. State and federal laws now protect all songbirds (with the exception of invasive species like English sparrows and starlings) in the United States, though many are hunted elsewhere.
