The term “mullet” (Mugil cephalus and Chaenomugil proboscidens) applies to both saltwater and freshwater fishes. The saltwater gray, or striped, mullet is found in warm to temperate waters on both the East and West coasts of America and is regarded as a good food fish. Herbivorous, the mullet eats by grazing through mud. The flesh is firm and sweet; however, since it is more perishable than other fish, mullet is best eaten within a day or two of being caught and is found fresh in markets nearest its source, most often in the South. It is not usually frozen but is sometimes smoked or filleted; it can be cooked with almost any dry or wet heat methods.
