The launching of Gourmet magazine in 1941 coincided with World War II, seemingly an inauspicious time to begin a magazine dedicated to good food and good living. But the publisher, Earl R. MacAusland, managed to demonstrate to his readers that despite rationing, his philosophy could benefit America by promoting “a fine appreciation of good food, less waste, and an even smaller expenditure of food.” He lived with his family and personal chef in a penthouse at the Plaza Hotel and moved the Gourmet office there as well.
