Settled by Spanish missionaries in the seventeenth century, San Antonio has a long and storied history as a culturally diverse enclave situated at the intersection of conversations about the frontier, tensions between north and south, and various diasporas, both international and domestic. Despite its ranking as the seventh-largest city in the United States and a population approaching 2 million people, San Antonio does not really register as a seat of culinary innovation. Yet the various cultural flows into and out of San Antonio have an enormous impact on the city and its various foods and food practices.
