The early settlers relied on cod, scallops, lobsters, crabs, oysters, and trout in New England and the Northeast. Southern settlers relied on shrimp and catfish, and many salmon dishes originated in the Northwest. Dried and smoked fish is a common food: herring, mackerel, and haddock in particular, as well as seafood chowders and bisques.
