Because many early settlers lived on farms, many Scottish American dishes center on roasted or braised meats and game, including quail, pheasant, and grouse. Barbecue pork, pot roast, meatloaf, Highland beef (Angus steak in whisky sauce), Kentucky fried chicken, meat and game pies, sausages, puddings, and Haggis (a blood sausage or savory pudding made with sheep’s innards simmered in sheep’s casing) are common. Another popular dish is a “Stovie” (leftover poultry or meat with gravy, potatoes, and onions—a baked casserole dish served with vegetables and oatcakes).
