Oats, corn, and barley are common grains used in Scottish American cooking. Porridge (oatmeal), oatcakes, corncakes, hushpuppies, and grits are the most popular use of these grains and served with jam, butter, cream, and cheese. Toasted oats are often used as a substitute for nuts, or added as a sweet or savory topping to desserts and casseroles.
